Day 2 of Operation Cupboard Clean-out!

Yesterday was the first full day of operation clean out. It was also my first day back to work in 2011. Therefore lunch was not very inspiring. It warrants only a list:

  1. Mixed green salad with pine nuts and sunflower seeds + Balsamic Dressing

  2. A Banana

  3. Vegetable soup from Jewel Osco (so I cheated a little bit)

For my snacks I had a Strawberry Banana Chobani greek yogurt and a mini Luna Bar.

Dinner was much more exciting because we had Shrimp Jambalaya!! For all those who have unused mixes in the back of your cupboard now is the time to use them! My fiancée traveled to New Orleans last spring and came back with all kinds of culinary goodies. One of which was this Jambalaya mix. The mix was just for the rice but we had frozen shrimp so he threw those in as well. See the picture below to see how it turned out.

Lessons from Day 2:

  1. I can survive a day with out the most delicious and inspiring lunch.

  2. Mixes are your friend and should not be left on the shelf!
